These crispy latkes are deeply golden brown, perfect for serving alongside my homemade applesauce and a dollop of sour cream.
Step 1 -
Grate the onions and potato in a food processor or with a box grater.
Step 2 -
Place the mixture into a cheesecloth and squeeze out as much liquid as possible.
Step 3 -
Make the latke batter.
Step 4 -
Drop batter into the hot oil in ¼-cup spoonfuls
Step 5 -
Fry on both sides until golden brown and crispy, about 2 - 3 minutes per side.
